‘Rasa’ is the Sanskrit word for taste, essence or flavour, a sensation perceived by the gustatory system. Taste is the very first impression formed over the tongue ‘Rasanendriya’, when eating or drinking it plays the most important role in satiating one’s palate. Ayurveda describes six types of tastes (Rasas); sweet (Madhura), sour (Amla), salt (Lavana), pungent (Katu), bitter (Tikta) and astringent (Kashya). We need all 6 to be healthy and consumed in the correct order for it to be effective. Every meal at Santani is created with this philosophy in mind, so that every guest is left truly satiated after every meal.

Rasa Haya can be even more effective when applied along with your Ayurveda body type (dosha). To reach an optimum state of health, understanding your individual constitution or your Ayurveda body type (dosha) is also essential, as your ideal diet should incorporate all six tastes according to your body type in the quantities each dosha dictates. The order remains the same, however, quantities of each of the 6 tastes differ according to your body and its needs.
